The Arauco variety is native to Argentina, occupying 49% of the total area planted with olive trees in the province of Mendoza, and is a “dual purpose” variety, since it is used to make both table olives and olive oil. It is characterised by being a very firm and fleshy fruit with a high pulp-bone ratio. Arauco varietal oils are characterised by a powerful and spicy bitterness, very fruity with very intense vegetable and mineral aromas, especially for demanding palates.
